Crispy Vegan “Chicken” Nuggets
Lion’s Mane Mushroom Nuggets

Instructions
1. Dry fry the mushrooms
Place the lion’s mane pieces in a hot pan without oil.
Cook for 3–4 minutes, stirring occasionally, until the mushrooms release and evaporate their moisture.
This concentrates the flavor and improves the texture.
2. Sauté
Add:
Sauté another 2–3 minutes until lightly golden.
Remove from heat.
3. Make the batter
In a bowl whisk together:
Slowly add cold water while whisking until the batter reaches a thick pancake batter consistency.
4. Batter the mushrooms
Add the cooked lion’s mane pieces into the batter and coat thoroughly.
5. Fry
Heat avocado oil to 350°F / 175°C.
Drop battered mushroom pieces into the oil and fry for 2–3 minutes until:
Remove to paper towel.
6. Serve
Serve hot with:
